DESMOND’S Meat Service, Kadina, has proven there’s no beef about it, they are the sausage kings.
The butcher shop won four awards at the Australian Meat Industry Council Sausage King Competition state awards on Saturday, October 30.
Desmond’s took out first place for its cheese and jalapeno kransky, second for its garlic mettwurst and a third for its bung fritz as well as its bacon.
Manager Robert Waters said the business was eligible to enter the state awards after winning five first places in the regional awards earlier this year.
“At the start of the year, we had a regional competition which stretched from Burra to Port Augusta and we entered nine products and had five first places,” he said.
“It was fantastic news (winning a state award), we were all very excited and all attended the black-tie dinner so it was exciting.”
Mr Waters said creating quality products is a team effort and gave a big shout out to apprentice Jordan Elliott for manufacturing the first and second products.
“We were competing against places like Barossa Fine Foods, Standom Smallgoods and large manufacturers so we were very happy to get a win and it was great to see so many other country butchers have success in the competition,” he said.
“All of the pork we use comes from our own piggery over at Long Plains which is called Ant-Hill Piggery.
“They play a big part because your pork meat is mostly used in smallgoods.”
Mr Waters said the business uses as much local product as it can throughout the entire store.
“It’s a reasonably lengthy process to create great products from the preparation of meat, measuring dry ingredients to the manufacturing, cooking and cooling of the product as well,” he said.
